Bright lemon, soft orange, raw honey. The drink that’s been in our family for four generations.

Ingredients

  • 10 oz hot olive leaf tea (fresh brewed)
  • 1 oz fresh lemon juice
  • 0.5 oz fresh orange juice
  • 0.5 oz raw honey
  • Optional: 1/8 tsp turmeric + pinch black pepper

Method

  1. Brew olive leaf tea hot, 5 minutes.
  2. Stir honey into the hot tea until fully dissolved.
  3. Add lemon and orange juice. Stir gently.
  4. Add turmeric + pepper if going functional. Drink slowly.
Tip:  The honey goes in while the tea is still hot. Not after the citrus. Heat carries the honey; acid muddies it.

  • 6 oz chilled olive leaf tea
  • 2 oz coconut water
  • 2 oz fresh grapefruit juice
  • 0.5 oz fresh lime juice
  • 0.5 oz honey or sweetener of choice

  • Grapefruit slice + mint

Method

  1. Combine everything except sparkling water in a shaker with ice.
  2. Shake briskly until cold.
  3. Pour over fresh ice in a highball or coupe.
  4. Top with sparkling water; quick stir.
  5. Finish with a grapefruit slice and a slap of mint.
Tip:  Add the sparkling water last, with a single lift (not a stir) to keep the bubbles intact.

Cook with the leaf

For four generations our family has steeped olive leaf as a daily ritual. The same whole leaves make more than a good cup. Brewed and cooled, they bring a bright, herbaceous note to dressings, marinades, sauces, frozen treats, and desserts. Everything below starts from one simple base.

Start here

Leaf & Heir Culinary Brew

One batch, ready in the fridge, the backbone of every recipe that follows.

Ingredients

  • Leaf & Heir Extra Virgin Olive Leaf Tea
  • 2 quarts water

Method

  1. Rinse the leaves in fresh cold water.
  2. Heat 2 quarts of water until just below boiling.
  3. Add about a quarter of a package of leaves.
  4. Simmer gently for 10 minutes.
  5. Remove from heat and let cool.
  6. Strain and transfer to a pitcher.
  7. Refrigerate until ready to use, up to 4 days.
Good to know:  Whole leaf means keeping nature intact. An occasional stem may be present and is perfectly safe to brew.

Salad Dressings

Whisk a spoonful of cooled Culinary Brew into a bright, herbaceous dressing.

California Citrus Olive Leaf VinaigretteOrange, lemon, honey, a whisper of Dijon

Ingredients

  • 2 tbsp strong Culinary Brew, cooled
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh orange juice
  • 1 tbsp fresh lemon juice
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Method

  1. In a small bowl, combine the cooled brew, orange juice, lemon juice, honey, and Dijon.
  2. Slowly whisk in the olive oil until the dressing emulsifies.
  3. Season with salt and pepper to taste.
  4. Toss over mixed greens, arugula, or a strawberry and avocado salad.
Mediterranean Olive Leaf DressingRed wine vinegar, garlic, oregano

Ingredients

  • 3 tbsp Culinary Brew, cooled
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste

Method

  1. Combine the cooled brew, olive oil, red wine vinegar, garlic, and oregano in a jar.
  2. Shake or whisk until smooth.
  3. Season with salt and pepper.
  4. Serve over cucumber, tomato, feta, or chickpea salads.
Creamy Avocado Olive Leaf DressingAvocado, lime, a touch of Greek yogurt

Ingredients

  • 1/2 ripe avocado
  • 1/4 cup Culinary Brew, cooled
  • Juice of 1 lime
  • 2 tbsp olive oil
  • 1 tbsp Greek yogurt
  • Salt to taste

Method

  1. Combine the avocado, brew, lime juice, olive oil, and Greek yogurt in a blender.
  2. Blend until smooth and creamy.
  3. Season with a pinch of salt.
  4. Drizzle over greens or grilled vegetables.

Marinades

Brewed olive leaf carries citrus, garlic, and herbs deep into chicken, shrimp, steak, and vegetables.

Olive Leaf & Lemon Chicken MarinadeBright lemon, garlic, honey

Ingredients

  • 1 cup Culinary Brew, cooled
  • Juice of 2 lemons
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp sea salt

Method

  1. Whisk together the brew, lemon juice, garlic, olive oil, honey, and salt.
  2. Place chicken in a shallow dish or resealable bag and pour the marinade over.
  3. Refrigerate 4 to 8 hours.
  4. Grill, bake, or pan-sear until fully cooked.
California Herb MarinadeRosemary, thyme, lemon zest

Ingredients

  • 3/4 cup Culinary Brew, cooled
  • 1/4 cup olive oil
  • 2 tbsp chopped fresh rosemary
  • 1 tbsp fresh thyme

  2. Marinate chicken, pork, or vegetables for at least 2 to 4 hours.
